Potato pancakes with chives

Ingredients:

1kg of potatoes after peeling
2 onions
bunch of chives
1 tablespoon of cream
2 eggs
3 tablespoons of wheat flour
2 tablespoons breadcrumbs
salt, pepper to taste
rapeseed oil for frying

Preparation:

Peel potatoes and wash before grating. Prepare the remaining ingredients needed for pancakes.

Potatoes, grate on fine mesh. Add the cream to keep it light. Grate the onion and add to the potatoes. Add chopped chives, flour, breadcrumbs and spices. Mix everything thoroughly.

Heat the oil in a frying pan and put the potato mass on a spoon forming the pancakes. Fry on both sides in golden colour. Put on a plate lined with a paper towel to remove excess fat.
