800g vegetables for grilling (for me: red, yellow and green peppers, zucchini, aubergine, cherry tomatoes, corn, red onion)
1 slice of peri-peri sauce
powdered chilli, sea salt and black pepper to taste
1 teaspoon of granulated garlic
1 tablespoon of rapeseed oil for frying
3 small eggs
2 cups of wheat flour
1 glass of water
1 glass of milk
100g chopped spinach
1 teaspoon of Matcha tea
pinch of salt
1 tablespoon of rapeseed oil
grated mozzarella cheese
Cut the vegetables into pieces. Preheat the grill pan with a little oil and put in the vegetables. Add peri-peri sauce, granulated garlic and spices. Grill to the softness of vegetables. Set aside.
Finely chop the spinach.
Pour the eggs into the high dish and beat them. Add flour, water, milk, spinach and Matcha tea. Season with salt and add oil. Mix all ingredients into a homogeneous mass.
Bake pancakes on a hot pan. Be careful not to blush too much and keep their green colour.
Pour half the pancake on vegetables and fold in half like a Calzone pizza.
Top with grated cheese and pour over ketchup. You can on 30 sec. put in the microwave, so the cheese is melted. Eat hot.
