Sicilian Pizza

Hi everyone. I came back after a long break with new recipes and ideas. Recently, many changes have happened in my life. I had to cut myself off from everything to think and re-arrange everything. However, I am already and for a good start I suggest a sensational pizza. Easy to prepare, not requiring too many ingredients and yet delicious with a unique taste. Sicilian pizza is a real pizza with black olives, but as with any pizza, the ingredients can be picked up to your liking. My pizza is on a bread flour with eggplant, peppers, capers and of course black olives. Let’s get started ๐Ÿ™‚

Ingredients:

  • The Dough:

400g strong bread flour or gluten free if needed

250ml rice milk

7g dried yeast

2 and 1/2 tsp brown sugar

1 tsp Himalayan salt

1tbsp flaxseed

3tbsp hot water

3tbsp walnut oil

1/2 tsp bicarbonate of soda

2 tsp cider vinegar

  • Tomato Sauce:

400g fresh chopped tomatoes

500ml passata

2tbsp walnut oil

1/4 tsp asafoetida

1/2 tsp dried chilli

1/2 tsp dried oregano

sugar and salt to taste

  • The Topping:

1 eggplant, sliced

1 yellow pepper, stripes

100g capers in brine, drained

100g black olives

2tbsp walnut oil for frying

fresh cilantro, cut

Method:

At the beginning, we prepare yeast dough. In a small bowl, pour hot water flaxseed and leave for a few minutes. In a large bowl, mix the flour and salt. Heat the milk slightly and pour the yeast in a separate bowl. Mix and leave for a moment to start making bubbles. Then combine the yeast with flaxseed and pour into the flour. Mix into a homogeneous mass. In a small cup, combine soda with cider vinegar and pour into the dough. Punch into a sphere. Set aside in a warm place under cover to double in size. About 1h.

In the meantime, prepare the eggplant, yellow pepper and tomato sauce. Stir the eggplant on both sides in oil and put on a kitchen towel to get rid of excess oil.

Same with paprika.

Pour the asafoetida in a frying pan over hot oil and then add oregano and chilli. Mix thoroughly with the oil. Add tomatoes, passata and fry for about 15 – 20 minutes with light heat stirring from time to time. The sauce must reduce its volume and become thicker.ย Seasoning to taste with sugar and salt.

Preheat the oven to 220 C and start kneading the dough. Divide into two parts and put in a casserole or a baking tray lined with baking paper.

Take the proved bases and smother on the cooled tomato sauce. Decorate the pizza bases. Finish with seasoning (Italian herbs) and chopped cilantro.

Cook in the oven for 10 – 15 minutes or until golden and crisp. Enjoy your Sicilian Pizza ๐Ÿ™‚
