Happy Mother’s Day Pancakes


In the morning my boys gave me good wishes for Mother’s Day, so I made a delicious, healthy breakfast for them. Banana and Berry Pancakes.



1 cup whole wheat flour

1/2 tsp baking soda

1 tbsp vanilla extract

1 cup plant milk

1 large banana

drizzle of nut oil

drizzle of honey

handful of berries


2 bowls. Bowl 1 – flour and soda. Bowl 2 – vanilla extract, mashed banana and milk. Carefully add the wet ingredients to the dry and mix together. Spoon the pancake mix on the skillet with oil, flipping when you see bubbles. Cook on both sides until golden. Top with a drizzle honey, berries, pistachios and what else you want. Enjoy 🙂
