Today I wanted to mention this miracle contained in small grains on the occasion of the soup that I cooked for our dinner today. I added to the soup for the richness of taste, but above all because of the iron content.
Amaranth – called the cereal of the 21st century – belongs to the oldest cultivated plants in the world. Prior to the discovery of America, along with maize, beans and potatoes, it was the basis of Inca, Maya and Aztec food. Amaranth is a cereal that is characterized by particularly high nutritional and health values.
